Join us at 50 Beech Street, our new location on September 23rd from 6:00pm - 7:30pm for a 90 minute heritage sourdough workshop led by John Hawkins - a home baker and founder of Solara Bread - a community micro-bakery in Ottawa.
This relaxed, large-group workshop is a show-and-tell and demonstration experience designed to take you through the sourdough process from starter to finished loaf. John will demonstrate the key stages of making artisan sourdough, share what he has learned working with heritage grains and fresh-milled flour, and answer questions along the way.
We'll explore:
-
Heritage grains and what makes them different
-
Sourdough starter — how to maintain it and know when it's ready to use
-
Mixing dough and understanding fermentation
-
Shaping an artisan loaf
-
Cold fermentation and preparing dough for baking
-
Scoring and baking
-
Storing and enjoying sourdough bread
-
Useful tools and equipment for baking at home
We'll also taste some freshly baked sourdough and talk about the flavours and characteristics that heritage grains bring to bread.
You'll leave with a heritage sourdough recipe and a practical understanding of the process so you can try it in your own kitchen.
This is a demonstration workshop — we won't be mixing or baking individual loaves during the session, so there's nothing you need to bring.
Fresh-milled flour and selected bread-making equipment will be available to purchase following the workshop.
PLEASE NOTE: Be sure you can attend the date of the class as we can only offer refunds for cancellations made 5 days prior to the workshop. We cannot offer refunds or substitute for future workshops due to weather, traffic or illness.
