About this grain:

Durum wheat was derived from domesticated Emmer wheat. Durum in Latin means "hard" which refers to the resistance of the grain while being milled. This grain yields a soft flour that is easy to work with and perfect for pasta dough. 

What to make with it: Fresh pasta, pizza

Extraction: 40%

Protein: Medium-Low
