Einkorn is one of the coolest wheats around. It was found in the stomach of Ötzi the iceman and is the earliest wheat to be cultivated by humans. It's a diploid wheat, meaning it has only two sets of chromosomes where modernized wheats are hexaploids. Because of this, along with it's low gluten content, it's one of the best grains to eat if you have digestive issues or gluten sensitivities. Or if you don't! It's got a nutty, slightly sweet flavour and has higher levels of fat, phosphorus, potasium, pyrodoxine and beta-carotene. It's really a super grain.
