About this grain:
Durum wheat, also known as pasta or macaroni wheat was developed by artificial selection of the domesticated Emmer wheat. Durum in Latin means "hard" which refers to the resistance of the grain while being milled. This yields a soft flour that is easy to work with and perfect for pasta dough. Semolina is made up of the coarser middlings that get separated during the milling process.
What to make with it: Fresh pasta, pizza, couscous, cake, dusting/coating
