Spicy Crispy Lentils

Made with Canadian-grown French Green Lentils, this recipe is a crowd pleaser. One of those tasty toppings you can pull out to add as a delicious and impressive garnish for soups and salads or just something to munch on by the fist full. Kid approved, so addictive and really easy to make, this recipe will surely be a staple repeat at home.  

Ingredients

230g French Green Lenitls, uncooked
1/2tsp Salt
1L Water
25g Olive oil
5g Salt 
1/2tsp Garlic powder
3/4tsp Cumin powder
1/4tsp Cayenne pepper (reduce the amount if you prefer them less spicy)

Preparation

Step 1

Rinse lentils well under cold running water.  Place lentils in a large pot with the water and salt.  Bring water, lentils and salt to a boil.  Reduce heat to a simmer and cook until the lentils are tender, about 10 minutes.

Step 2

 

While lentils are cooking:
Heat oven to 163*C/325*F
Prepare a baking tray with parchment paper lining
Mix together olive oil, salt, garlic powder, cumin powder and cayenne pepper
 

Step 3

Drain the cooked lentils in a colander, run cold water over them to cool them down quickly. Allow the lentils to drain well. Place the cooked, drained lentils on a paper towel or dishcloth and pat dry.


Step 4

Place lentils in a large bowl. Pour in the olive oil / spice mixture and toss to coat well. 
Spread lentils evenly on the lined baking sheet and bake for approximately 20 minutes, stirring once at the 10 minute mark.
Allow lentils to cool then enjoy!
