These granola bars will keep you going just when you thought it was time to give up. They're so tasty and packed to the brim with good stuff. Easy to make and totally kid approved.
375g Dates
165g Maple Syrup
120g Peanut butter (Natural)
8g Vanilla
100g Whole almonds (toasted & chopped)
100g Sliced almonds (toasted)
40g. Sesame seeds
75g Toasted salted pumpkin seeds
225g Rolled Oats (toasted)
As Desired Flakey sea salt
Lightly Toast nuts and oats.
Line a 9x13 pan with parchment paper.
Place dates in the food processor.
Process on low speed until dates are broken down and sticking/clumped together.
Bring maple syrup and peanut butter to a light boil in a small pan, stirring often.
Reduce heat and Allow mixture to simmer for 2 minutes, stirring constantly.
Remove from heat, add in vanilla.
Add the processed dates and the stove mixture to a bowl and mix together well with a wooden spoon.
Add the nuts, seeds and rolled oats to the date mixture, mixing until thoroughly incorporated.
Press mixture down evenly into the prepared pan. Use a loaf tin to press down and even out the bars.
Allow bars to cool in the fridge. Once cooled, sprinkle bars with flakey sea salt before cutting.
Cut into bars 12 bars. Enjoy!
